Irish Law & Uisce Éireann (Irish Water)
- Trade Effluent Licence: Most hospitality premises (food service establishments) that discharge kitchen wastewater to sewer must hold a Trade Effluent Discharge to Sewer Licence issued by Uisce Éireann (formerly Irish Water).
- FOG control: You are expected to install and maintain suitable FOG control (e.g., grease separator/trap or automatic grease removal unit), keep maintenance records, and comply with any discharge limits and servicing frequencies set out in your licence conditions.
- Waste transfer & documentation: FOG waste must be removed by a permitted waste collector. Keep consignment/collection records for inspection.
What Is a Grease Trap?
A grease trap (grease separator/interceptor) is a device installed on kitchen wastewater lines to capture fats, oils and grease before they enter the sewer. As wastewater cools, grease rises and is retained; cleaner water exits downstream.
There are two main types used in commercial kitchens:
- Passive (gravity) separators — installed above or below ground. They work without external power by holding flow long enough for grease to separate.
- Automatic / Electronic grease removal units (AGRUs) — compact, typically installed under‑sink or in plant rooms. They use mechanical skimming and timed heating/controls to remove grease to a sealed container for collection.
